Garlic Egg Fried Rice

‘My family loves this tasty fried rice dish. It’s super easy to whip up and is so much healthier than a take away. You can add a protein eg cooked chicken or prawns and veggies such as peas, mushrooms and/or sweet corn at stage 2 of the cooking process if you want to make this a complete meal instead of a side.

What You Need

Ingredients
2 cups basmati/long grain rice
4 cups water
4 large cloves garlic (finely chopped)
4 spring onion (finely chopped)
2 eggs
2 tablespoons oyster sauce
2 tablespoons light soya sauce
2 tablespoons vegetable oil
2 finely chopped spring onions to garnish

How To Make It

1. Add the rice and water to a lidded saucepan. Bring to the boil then immediately turn down to a very low simmer. Keep covered and do not lift the lid. Cook for 15 mins. Turn off and allow the rice (still lidded) to sit for 10 mins. Gently fork through to loosen the grains.
2. Add oil to a large wok. When hot add garlic and spring onions. Stir fry for 1 minute
3. Add rice, oyster sauce and soya sauce. Stir fry for 3 minutes until everything is combined
4. Crack the eggs into the rice and stir fry for 5 minutes working quickly until all the rice is coated in the egg and the eggs are cooked
5. Garnish with spring onions
