Nice & Spicy Indian Masala Omelette

A fabulously tasty way to eat eggs. There are lots of versions of a masala omelette. I like to keep mine fresh with lots of ginger, chilli and fresh veggies. Feel free to add additional veggies such as peppers and mushrooms. You could even try adding protein such as prawns, smoked salmon or ham. Personally I like to keep it simple & think that the recipe below is perfect for a post workout brunch or a light lunch or supper. Serve with a nice green salad or a pile of hot buttered toast (if you aren’t watching your carbs!)

What You Need

Ingredients
3 very fresh large eggs
A splash of milk
1 tsp grated fresh ginger
1 spring onion (finely chopped)
1 green chilli (finely chopped)
1 tomato (chopped)
A handful of fresh spinach (chopped)
Salt and pepper to taste
1 tsp vegetable oil
Half tsp garam masala

How To Make It

1. Heat the oil in a non stick frying pan. When hot add onion, ginger & chilli. Fry until soft
2. Whilst the onion mix is frying crack the eggs into a bowl, add the milk and season with salt and pepper. Whisk the egg mixture with a fork
3. Add the tomatoes, spinach and garam masala to the frying pan and cook for 1 minute, mixing continuously
4. Turn on your grill
5. Add the egg mixture to the pan & cook on a medium heat for about 3 minutes or until the underside of the omelette is set and cooked
6. Place the pan under the hot grill for about 2 minutes or until the top of the omelette is set & cooked
7. Enjoy!
