Totally Scrumptious Chocolate Brownies
Totally decadent with as much chocolate as you can fit into a cake/pud/dessert without it actually being pure chocolate! These are a real crowd pleaser. Be prepared for lots of ‘oooooo’s’ and ‘ahhhhhhhh’s’ whenever you serve these. I like to serve these slightly warmed (either from the oven or if cooled 20 second zap in the microwave) with a good quality vanilla ice cream. Delicious!
Serves 6 (or 1 if being greedily selfish!)
What You Need
Ingredients
185g good quality 70% dark chocolate
100g good quality chocolate chips
185g unsalted butter
40g cocoa powder
3 large eggs
250g caster sugar
85g plain flour
How To Make It
1. Heat oven to 150C fan/170C conventional/gas mark 4. Put a pan of water on the hob and bring to a simmer
2. Place butter and dark chocolate in a bowl that fits on top of the saucepan. Melt the butter and chocolate slowly, mixing every now and then. Once melted remove the bowl from the saucepan and leave to cool to room temperature
3. Line a 20cm square tin with baking parchment
4.Sieve the flour and cocoa into a bowl
6. Place eggs and sugar in a large bowl and whisk using an electric mixer for about 6 minutes until the mix is frothy, thick and creamy
7. Pour the melted chocolate mix over the frothy egg mix and gently fold until combined
8. Re sieve the flour and cocoa into the choc/egg mix. Gently fold again until glossy. Do not over mix. Gently fold in the chocolate chips
9. Pour into the prepared tin and bake for 20 minutes then turn off the oven and leave for another 20 minutes. Remove from the oven and cool in the tin. Remove using the baking parchment and cut into desired sized squares
