Jerk Marinade

Use as a marinade for chicken, pork, beef or fish. For chicken use leg pieces and slash all over the leg with a knife. Place chicken in a large plastic zip lock bag together with enough marinade to coat each chicken piece. Seal and allow to marinade in the fridge for 24 hours. Cook in a hot oven (200 degrees C) for 45 minutes

What You Need

Ingredients
Half a medium Onion
3 spring onions
3 tablespoons fresh thyme leaves
1 and half tablespoons fresh ginger
8 peeled garlic cloves
1 tablespoon cinnamon powder
1 tablespoon allspice powder
Half tablespoon nutmeg
1 tablespoon dark muscovado sugar
2 tablespoons soy sauce
2 scotch bonnet peppers
Juice of 1 lime
Salt to taste

How To Make It

Place all ingredients into a blender and blitz to a smooth paste
