Caribbean style stir fried spicy greens with shrimp

Love this. Really quick and uber tasty meal. As always reduce the scotch bonnet if you can’t stand the heat! 😁

Serves 2

What You Need

Ingredients
200g sliced spring greens
200g raw king prawns
1/2 scotch bonnet pepper (sliced)
3 large cloves of garlic (finely chopped)
3 large spring onions (sliced)
1 tomato (chopped)
1/2 tsp black pepper (I prefer coarsely ground)
1/2 tsp madras curry powder
Salt to taste
1/2 – 1 tsp Encona chilli sauce (or any West Indian chilli sauce with low vinegar content and no sugar)
2 tbsp veg/sunflower oil

How To Make It

1. Heat oil in a large frying pan
2. Add spring onions, garlic and scotch bonnet. Fry for 2 minutes or until the onions are soft. Don’t burn!
3. Add chopped tomato. Fry for 2 minutes until the tomatoes are soft
4. Add the dry spices. Fry for 2 minutes.
5. Add greens and stir fry for 3 minutes
6. Add the shrimp, chilli sauce and salt to taste
7. Stir fry until the shrimp are cooked through (about 4/5 minutes)
8. Enjoy with rice or rotis
