Oozy Eggs and Avo Smash with Smoked Salmon

This is such a delicious yet healthy recipe for the perfect lazy weekend breakfast or post workout brunch. It looks stunning when the eggs are cut into and the yolk oozes out. Heaven!

Serves 2 (or 1 hungry person!)

What You Need

Ingredients
2 slices of sourdough bread
2 very fresh large eggs
1 tsp white wine vinegar
1 large ripe avocado
1 spring onion (finely chopped)
1 green chilli (finely chopped)
1 tomato (chopped)
Juice of 1/2 lime
Salt and pepper to taste
4 slices smoked salmon
Finely chopped chives
Chilli flakes

How To Make It

1. Place a large pan of water with vinegar on a high heat and bring to a rolling boil. Swirl the water with a spoon
2. Crack the eggs into the swirling water one at a time. Keep boiling. Don’t touch or interfere with the eggs. It will look like a mess but be patient and don’t panic! Cook eggs in the water for approx 2 mins until the whites have encased the yolks and the eggs are able to be removed carefully from the pan with a slotted spoon
3. Drain the eggs on a piece of kitchen paper on a plate
4. Smash the avocado, tomato, onion, chilli, lime juice, salt and pepper together in a bowl. Mix well.
5. Toast the sourdough
6. Assemble on a plate. Spread avo smash generously on each piece of toast. Place 2 slices of smoked salmon on top of the avo smash. Place 1 egg on top of the salmon. Garnish with chopped chives and chilli flakes
